In stainless clad Shirogami 1 - a very pure carbon steel from Hitachi.
With very little alloy content Shirogami 1 is very easy/quick to sharpen - though it doesn't keep an edge as long as a steel like Aogami Super. Shirogami 1 is a very popular steel with chefs in Japan.
