167mm Gyuto. In stainless clad Aogami Super - a very high carbon steel from Hitachi.
A classic chef knife. The Gyuto shape was developed by Japanese knifemakers in the second half of the 19th century when western-made chefs' knives started to be seen in Japan. Gyuto literally means 'cow sword'. This is a smaller taller version - great allrounder.
