210mm Gyuto. A classic chef knife. The Gyuto shape was developed by Japanese knifemakers in the second half of the 19th century when western-made chefs' knives started to be seen in Japan. Gyuto literally means 'cow sword'.
VG10 stainless san-mai blade. The core is Takefu VG10, a very nice stainless steel with properties more like a carbon steel for edge retention and ease of sharpening.
