210mm KIRITSUKE #166
£270.00
210mm Kiritsuke. In stainless clad Aogami Super - a very high carbon steel from Hitachi.
A classic chef knife with a k-tip. The Gyuto shape was developed by Japanese knifemakers in the second half of the 19th century when western-made chefs' knives started to be seen in Japan. Gyuto literally means 'cow sword'. The Kiritsuke version has a sharp angled front edge giving an extra fine tip, and it looks great.
Specs:
Stainless steel cladding
Aogami (blue paper) Super carbon steel core
Blade 210x46mm
Handle in 5000 year old Fenland bog oak - 135mm
N.B. There is a small cosmetic flaw on the cladding which you can see in the second picture - hence the price reduction from £290 to £270. The performance of the knife is not affected.
