258mm single bevel Gyutohiki. This is a versatile larger chefs' knife/slicer. Very thin behind the edge, cuts beautifully. Quite a different experience with a single bevel.
Low carbon cladding - laminated in-house
Aogami (blue paper) no.2 carbon steel edge for a ''ni-mai' (two layer) blade. Aogami 2 is a really great cutlery steel alloyed with around 1.5% added tungsten, enabling extra hardness and toughness. We do like the contrast we get between the cladding and core steel with this combination of materials.
Handle in vintage Lignum Vitae and 5000 year old Fenland bog oak - 150mm
Lignum vitae is an amazing material, full of oil, it was once used for ballbearings for steam ship propellers.
