In carbon clad Aogami Super - a very high carbon steel from Hitachi
I call this the 'home knife', with the all round versatility of a Santoku, but a bit of Gyuto-ness in the shape. It has a very nice knifey feel in the hand, balance and comfort - a pleasure to use.
