In carbon clad Aogami Super - a very high carbon steel from Hitachi - with excellent edge retention and ease of sharpening.

A smaller chef knife with a k-tip. The Gyuto shape was developed by Japanese knifemakers in the second half of the 19th century when western-made chefs' knives started to be seen in Japan. Gyuto literally means 'cow sword'. The Kiritsuke version has a sharp angled front edge giving an extra fine tip, and it looks great.
