156mm One-piece knife.
A classic Japanese style all rounder, developed from the Nakiri shape in the late 1940s and 50s when a wider variety of food became readily available in Japan. Santoku means 'three virtues' referring to its use with fish, vegetables and meat - though some attribute it to three uses - slicing, dicing, chopping.

Forged from a single piece of O1 tool steel.
These knives have a good heft to them and are quite a different experience in the hand - we like them, of course.
This is a raw and visceral example retaining many marks of the making process.
