174mm Gyuto. A classic chef knife. The Gyuto shape was developed by Japanese knifemakers in the second half of the 19th century when western-made double-bevel chefs' knives started to be seen in Japan. Gyuto literally means 'cow sword'.

Stainless clad Aogami Super - a very high carbon steel, at 1.45%, with really excellent edge rentention.
