194mm Gyuto - classic chef's knife.
The Gyuto shape was developed by Japanese knifemakers in the second half of the 19th century when western-made chefs' knives started to be seen in Japan. Gyuto literally means 'cow sword'.

Mono (not laminated) Hitachi Shirgami (white paper) no.1 - a very pure, clean, high carbon steel, popular with purists and chefs in Japan. Easy to sharpen, holds an edge well.
