216mm Gyuto - classic all-round chef's knife. A less tall, nimble variant.
This is a really special one, forged in stainless clad Shirogami (white paper) 1 steel.
Shirogami 1 is a very pure high carbon steel, very popular with Japanese chefs and traditionalists - it takes a very fine edge with great ease. I have initiated a forced patina on the carbon steel edge by leaving the blade in chopped onions. The patination will continue with use, adding a fine protective layers to the steel.
The Gyuto shape was developed by Japanese knifemakers in the second half of the 19th century when western-made chefs' knives started to be seen in Japan. Gyuto literally means 'cow sword'.
